These black bean cakes take about 10 – 15 minutes to make and taste so good! My mom and I were just playing around with the ingredients in the pantry and fridge one day and came up with this recipe which I think you will love too <3
Ingredients (makes 4 cakes):
1 cup black beans
3 tbs diced red onion
2 tbs finely chopped cilantro
½ small jalepeño (diced)
1 flax egg (combine 1 tbs ground flax seed with 1 tbs water and allow it to sit for 5 minutes)
½ tsp garlic powder
½ tsp chili powder
½ tsp smoked paprika
sprinkle of salt and pepper
1. Combine all of the ingredients in a bowl and gently mash together – you can do this using a fork or just with your hands. I personally like my cakes a little chunkier so I don’t completely puree the beans, just make sure everything is well combined.
2. Shape the black bean mixture into four balls and then gently flatten them.
3. Heat olive oil on a skillet at a medium heat, then toss on the patties. Cook for about 4 minutes on each side, or until each side looks a little browned and crispy.
4. Remove from the skillet and enjoy!
I served mine with a guacamole-ish avocado puree made from ½ mashed avocado, about 1 tsp chopped cilantro, squeeze of lime juice, and a sprinkle of garlic powder, salt, and pepper.
