3 Different Cauliflower Steaks

So normally I wouldn't really call this a steak - non vegans (mainly my boyfriend) seem to get SO upset when cauliflower is used to replace meat (like really, why??), but since I don't know what else to call it, here are a few different ways to season a cauliflower steak! It's really just roasted cauliflower in a new shape, but its SoOoOo good!!

Curry Cauli Steak

Ingredients:

1 large head of cauliflower

1 tbs olive oil

1/4 tsp (or more) of curry powder

1/4 tsp garlic powder

salt and pepper

OPTIONAL: sprinkle with some cayenne pepper to give it some KICK

This one is paired with my vegan mac n cheese - click here for the recipe!

Smoky Paprika Cauli Steak

Ingredients:

1 large head of cauliflower

1 tbs olive oil

1/2 tsp (or more) of smoked paprika

1/4 tsp garlic powder

salt and pepper

Cumin Cauli Steak

Ingredients:

1 large head of cauliflower

1 tbs olive oil

1/2 tsp cumin

1/4 tsp garlic powder

1/4 tsp onion powder

salt and pepper

Pictured on the right buried in a nourish bowl with rice and black eyed peas cooked in veg broth with onion, garlic, cumin, salt and pepper, artichoke hearts, miso-tahini dressing, and za'atar and red pepper flakes.

Instructions

  1. Honestly, the hardest part of this recipe is cutting the cauliflower into "steaks" without it completely falling apart. Cut them about an inch thick - you should be able to get at least 3, maybe even four steaks if you're better at it than me!

  2. Coat the steaks with olive oil, then rub on the spices. Sprinkle with a little salt and pepper.

  3. Pop them in the oven at 425 and bake for 25-30 minutes, flipping them over halfway through!
