Apple Chai Oat Cake


Ingredients (makes 2 servings):

1/2 cup oat flour

1 tbs flax seeds (create flax egg by allowing to sit for 5 minutes in a small bowl with 2 tbsp of water)

1 tsp chai spice blend*

1 tsp baking powder

1/2 ripe banana

1/2 cup milk of choice (I used almond)

2 tbsp stevia (or other sweetener of choice)

1/2 tsp vanilla

1 small diced apple


*My Perfect Chai Spice Blend:

2 teaspoons ground cardamom

2 teaspoons ground allspice

2 teaspoons ground nutmeg

4 teaspoons ground cinnamon

2 teaspoon ground cloves

6 teaspoons ground ginger

store in an airtight container and enjoy!


Instructions:

  1. Pre-heat oven to 375.

  2. Blend oats to create oat flour, then add other dry ingredients and blend.

  3. Add banana, vanilla, and milk and blend until smooth.

  4. Dice apple (I kept a few thin slices for topping) and mix in with batter.

  5. Pour into dish and bake for 30 mins.

  6. Serve with a little almond milk and a cinnamon sprinkle!
