Ingredients (makes 2 servings):
1/2 cup oat flour
1 tbs flax seeds (create flax egg by allowing to sit for 5 minutes in a small bowl with 2 tbsp of water)
1 tsp chai spice blend*
1 tsp baking powder
1/2 ripe banana
1/2 cup milk of choice (I used almond)
2 tbsp stevia (or other sweetener of choice)
1/2 tsp vanilla
1 small diced apple
*My Perfect Chai Spice Blend:
2 teaspoons ground cardamom
2 teaspoons ground allspice
2 teaspoons ground nutmeg
4 teaspoons ground cinnamon
2 teaspoon ground cloves
6 teaspoons ground ginger
store in an airtight container and enjoy!
Instructions:
Pre-heat oven to 375.
Blend oats to create oat flour, then add other dry ingredients and blend.
Add banana, vanilla, and milk and blend until smooth.
Dice apple (I kept a few thin slices for topping) and mix in with batter.
Pour into dish and bake for 30 mins.
Serve with a little almond milk and a cinnamon sprinkle!
