Banana Almond Pulp Cookies

As someone who hates food waste, when I started making my own almond milk I had to find something to do with the leftover pulp. These cookies are a little sweet and make the perfect breakfast or on the go snack!

THE RECIPE




Ingredients: 

2 ripe bananas 

2 cups almond pulp 

1 cup rolled oats

1/2 cup peanut butter 

1 tsp baking powder 

1 tsp cinnamon

1 tsp vanilla extract 


Instructions: 

  • Pre-heat oven to 350. 

  • Mash bananas then add almond pulp, oats, peanut butter, baking powder, cinnamon, and vanilla extract. 

  • Mix thoroughly.

  • Spray a baking sheet then roll cookies into balls to bake.

  •  Bake for 20 minutes and allow to cool before enjoying or storing in an airtight container.

  • Enjoy!
