The best summery tacos you'll find! These are super flavorful and tasty, topped with my mango slaw recipe!

Ingredients (makes 2 servings):
1 can jackfruit (I get the can from Trader Joes)
4-6 mini taco shells
1/4 cup BBQ sauce (I also like Trader Joes BBQ Sauce!)
1 tbsp avocado oil
1/4 tsp chili powder
1/4 tsp smoked paprika
1/2 avocado
For the mango slaw:
1 bag of slaw
2 medium ripe mangos
1/2 cup chopped cilantro
1/4 cup chopped green onions
2 tbsp avocado oil
2 tbsp rice vinegar
2 tbsp honey or agave
juice from 1 lime
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp black pepper
Instructions:
For the slaw:
Slice mango into small pieces.
Pour slaw mix into a large mixing bowl and add mango.
Add in cilantro, green onion, oil, vinegar, honey or agave and lime juice and mix thoroughly.
Add spices and mix thoroughly.
Set aside
For the tacos:
Drain rinse and dry the jackfruit.
In a bowl, remove the center seed pods and shred to get the appearance/ consistency of pulled pork.
Heat avocado oil in a skillet at a medium heat, then toss in the jackfruit.
Add the spices and sautee for about 2 minutes.
Pour over the BBQ sauce and sautee for another 1-2 minutes.
Heat taco shells on a skillet on medium heat.
Top taco shells with Jackfruit, avocado and mango slaw and enjoy!
