Hello summer! I love tacos during the summer because they're fun, easy and light! These tacos literally taste like summer with grilled pineapple and tangy BBQ sauce! They even got a non-vegan stamp of approval :)
Ingredients:
1 package of Tempeh
10-12 corn tortillas
3-4 slices of pineapple
1/4 cup of your favorite BBQ sauce
For the homemade pico:
2 roma tomatoes (diced)
1/4 cup of diced white onion
3 tbsp finely chopped cilantro
one small jalapeno - diced
juice from one lime
salt and pepper to taste
Instructions:
Slice and grill pineapple (I let my boyfriend do this - if you don't want to grill the pineapple just dice and toss it on the tacos, I just like the taste of grilled things a lot!)
Slice tempeh into strips, marinade in BBQ sauce and bake at 350 for 10-12 minutes.
Combine all ingredients for pico into a bowl and mix together.
Warm corn tortillas on a skillet.
Top tortillas with tempeh, pineapple, and pico - option to garnish with a little extra lime juice and jalapeno if you'd like!
