Ingredients (makes 10-12 servings):
1 package of Nasoya extra firm tofu **
1 bag of romaine lettuce
1/2 cup of vegan parmesan cheese (I like Follow your Heart)
1 bottle of vegan caesar dressing (my favorite is from Trader Joe's but I have found good ones at Kroger and Publix as well)
about 1/2 cup or a little more of your favorited BBQ sauce
1 package of rice paper
Instructions:
Press your tofu by wrapping a dish towel or paper towels around it and sitting a heavy object on top for about 30 minutes.
Heat oven to 350.
Slice tofu into long thin pieces and marinade in BBQ sauce before laying it out on a baking tray and baking for 30 minutes, flipping the tofu halfway through.
In a large bowl combine romaine lettuce, desired amount of caesar dressing, and vegan parmesan and toss.
Soak rice paper in water according to instructions on package - I have found it is easier to roll when you allow it to stay somewhat brittle when removing it from the water.
Place 1-2 slices of tofu in the rice paper and about 1/3-1/2 cup Caesar salad.
Tightly roll the rice paper over locking in the filling before folding the ends in and finishing rolling.
Serve with more caesar dressing and enjoy!
