Black Bean and Corn Burger

During the summer I always LOVE LOVE LOVE any form of veggie burger - I guess they make me think of cook outs?? Anywaysssss my favorite veg burgers are always made with black beans and some spice! These are super easy and fun to make too!

Ingredients (makes three patties):

1 can of black beans (drained and rinsed)

1/2 cup of corn

1/4 cup chopped cilantro

1/4 cup tapioca flour (or other flour)

1/3 cup of diced red onion

1 tbs diced jalapeno

1 flax egg (1 tbsp flax seeds + 2 tbsp of water - allow to sit for 5 minutes)

1 1/2 tsp garlic powder

1 1/2 tsp smoked paprika

1 1/2 tsp chili powder

1 1/2 tsp cumin

1/2 tsp salt

1 tsp black pepper


Instructions:

  1. Pre-heat oven to 350 F.

  2. Combine all ingredients in a large mixing bowl.

  3. Mash everything together using your hands - this is a little messy but its fun! Also an option to add everything (minus the corn) to a food processor and pulse. It depends on the consistency you like in your burger - I like mine a little chunky so I go for the by-hand method.

  4. Shape your mix into 3 patties and place them on a greased baking sheet.

  5. Bake for 25 minutes, flipping half way through.

  6. These can be stored in the fridge for a couple days or in the freezer for however long you like! Just put them on a skillet at a medium heat for about 3-5 minutes on each side to heat them up!

  7. Serve with grilled pineapple, avocado, pickled onions and salsa on a bun or lettuce wrap!
