Black Bean Chipotle Soup

Loving this soup lately, because its so simple yet so yummy! Lately I've been aiming to make recipes with less ingredients, and ingredients that are accessible to more people! This soup is spicy and delicious and super cheap to make, hope you enjoy!

Ingredients:

1 can of black beans (rinsed and drained)

2 chiopotles in adobo

3 cups of vegetable broth

1/2 cup of diced white onion

3 cloves of garlic

1 tsp smoked paprika

1/2 tsp chili powder

1/2 tsp salt

1/2 tsp black pepper



Instructions:

  1. Rinse and drain can of black beans, and set aside 1/2 cup of beans

  2. In a medium pot on a low heat, add the rest of the black beans, chipotles in adobo, 2 cloves of diced garlic, and 1 1/2 cup of vegetable broth, 1/2 tsp of smoked paprika, chili powder, 1/4 tsp salt, and 1/4 tsp of black pepper. Stir occasioanly.

  3. Allow this to simmer for 4-5 minutes, then pour into a food processor.

  4. In the same pot, add the rest of your vegetable broth, diced onion, 1 clove of diced garlic, 1/2 tsp smoked paprika, 1/4 tsp salt, and 1/4 tsp black pepper. Allow to simmer at a low heat.

  5. Process the first black bean mixture until smooth, then pour back into the pot.

  6. Add your black beans to pot, and cover and allow to simmer for 15 minutes, stirring every 2-3 minutes.

  7. If the mixture is too thick, then add more vegetable broth.

  8. Enjoy plain or top with cilantro, spicy granola, tortilla chips, vegan cheese, nooch.... anything your heart desires! I topped mine with cilantro and McCabes Spicy Dino-Mite granola!
