Ingredients:
2 cups black eyed peas (1 cup of dry black eyed peas)
3 tbsp tahini
3 tbsp olive oil
juice from 1 lemon
1/4 cup water
1/2 tsp coriander
1/2 tsp garlic powder
1/4 tsp cumin
salt and pepper to taste
Instructions:
Cook 2 cups of black eyed peas according to instructions on bag - I usually cook them for 20-25 minutes. When peas are soft, drain and allow to cool.
Add all of your ingredients into a blender or food processor and blend until desired consistency. If your hummus is too think, add more water by the tablespoon.
Eat with veggies, make toast, or put a spoonful on a salad and enjoy!
