Black Eyed Pea Hummus

What do you do when you run out of chickpeas but are still craving hummus? Make this delicious black eyed pea hummus! Its smooth, creamy, and delicious!

Ingredients:

2 cups black eyed peas (1 cup of dry black eyed peas)

3 tbsp tahini

3 tbsp olive oil

juice from 1 lemon

1/4 cup water

1/2 tsp coriander

1/2 tsp garlic powder

1/4 tsp cumin

salt and pepper to taste


Instructions:

  1. Cook 2 cups of black eyed peas according to instructions on bag - I usually cook them for 20-25 minutes. When peas are soft, drain and allow to cool.

  2. Add all of your ingredients into a blender or food processor and blend until desired consistency. If your hummus is too think, add more water by the tablespoon.

  3. Eat with veggies, make toast, or put a spoonful on a salad and enjoy!
