Summer is for island flavors and refreshing breakfasts, am I right? Chia pudding has been my go-to busy morning breakfast lately and right here is my fav combo!
Ingredients:
2 tbsp chia seeds
one scoop of protein powder (I have been using evo hemp recently)
2 tbsp of coconut flakes
1/8 tsp of blue spirulina (can add more for a deeper blue color)
1 tbsp of stevia
dash of vanilla
2/3 cup of coconut milk
optional: fruit, more coconut, nuts, or granola for topping
Instructions:
Combine all ingredients into a jar or container and mix thoroughly.
Sit in Fridge for 5-6 hours or overnight. Seeds will absorb the milk and create a thick pudding like gel. If this is too thick, add more milk and stir more before serving!
Top with fresh fruit, nuts, granola or whatever you like and enjoy!
