Blueberry Lemon Oat Cake

This oat cake is like dessert for breakfast :) It tastes like summer and is perfect for a lazy Sunday, or for a meal prepped breakfast on the go!


Ingredients:

(serves 2)

1/2 cup oat flour

1/2 smashed ripe banana

1/4 cup almond milk

2 tbsp coconut sugar

1 tbsp grated lemon

1/2 tbsp fresh lemon juice

1/2 cup frozen blueberries

splash of vanilla and a pinch of salt

1 tsp baking powder



Instructions:

  1. Preheat your oven to 375.

  2. Put all of your ingredients (minus the blueberries) into a blender and blend until smooth. Fold in the blueberries and then place in a small baking dish.

  3. Bake for 25 minutes.

  4. I served mine with a blueberry compote that was just a combo of mashed blueberries, stevia, and chia seeds and some banana slices!
