Buffalo Cauliflower Lettuce Wraps

Maybe starting a new series for easy, healthy, and tasty recipes because I have had almost no time to cook this year. These wraps are spicy, light, healthy, and most importantly very quick to make!

Ingredients (makes 2 servings):

6 large romaine leaves

1/2 cup rice

1 head of cauliflower

1/2 cup shredded carrots

1/4 cup buffalo sauce (I use Noblemade)

vegan ranch (can buy or make your own with my recipe here)




Instructions:

  1. Preheat oven to 425.

  2. Chop cauliflower into bite-size pieces and coat in buffalo sauce.

  3. Spread out the cauliflower on a sprayed baking sheet and bake for 20 minutes.

  4. Cook rice according to the instructions on the package.

  5. Distribute rice onto the lettuce leaves.

  6. Top with cauliflower and shredded carrots.

  7. Drizzle on ranch and enjoy!
