I love this recipe because tortilla pizzas are a lot lighter, lower calorie, and less carb-loaded than using a normal pizza crust. Ingredients:
1 tortilla (I use Mission Protein Tortillas - 7 grams of protein and only 70 calories!)
1/3 cup of buffalo chickpeas (click here for recipe)
1 1/2 tbsp buffalo sauce - I use one from Public Goods thats so good! Linked here and you can use code SIMPLYRADISHINGPGA for 15% off your order!
1/3 - 1/2 cup vegan mozzarella cheese (I use Daiya)
2 tbs shredded carrots
1/2 stalk celery
1 tbs vegan ranch (click here for my recipe!)
1 tbsp scallions
1 tbsp diced sweet onion
Instructions:
Preheat oven to 400.
Spread buffalo sauce onto tortilla, then top with cheese, chickpeas, onion and carrots.
Place tortilla directly on the oven rack, and bake for 8 - 10 minutes, until the cheese is melted and the tortilla is crispy.
Use a peeler to peel strips of celery - after removing pizza from oven, top with celery, scallions and a drizzle of vegan ranch.
