Who else buys an excess of bananas every time they go to the grocery, and can never eat them all before they're too ripe? If you can relate, then this recipe is for you!! These cookies are thick, fluffy, and delicious - they are basically yummy banana bread but in cookie form!
Ingredients (recipe makes 12 cookies):
2 medium ripe bananas (mash them up!)
1/4 cup creamy nut butter (I used almond but peanut butter or cashew butter are also options!)
1/3 cup plant mylk (I used unsweetened almond)
2 cups oat flour
1 tsp baking powder
1 tbs unsweetened applesauce
1/4 cup maple syrup
1/2 cup chocolate chips
1 cup chopped walnuts
Instructions:
Pre-heat oven to 350.
Combine everything except for the chocolate chips and walnuts and mix thoroughly.
Fold in the chocolate chips and walnuts.
Spoon the batter/ dough into 12 blobs (thats basically what mine looked like) on a parchment paper lined baking sheet.
Bake for 20-25 minutes, allow them to cool, and then enjoy!
