Ingredients:
1/2 cup crispy buffalo chickpeas - recipe here
2 handfuls of spinach
1/3 cup chopped red cabbage
1/3 cup diced cucumber
1/3 cup chopped celery
1/3 cup of shredded carrots
1/4 cup of vegan mozzarella shreds (I used Daiya)
2 tbsp chopped scallions
drizzle of vegan ranch - recipe here
Just combine all of your ingredients in a bowl and enjoy - if you want it extra spicy, drizzle with a little more Buffalo sauce!
