Been loving chickpea salad lately as a quick, healthy, and filling lunch! I hope you enjoy this flavorful recipe as much as I do!

Ingredients:
1 can of chickpeas
1/2 cup diced carrots
1/4 cup diced red onion
1/4 cup chopped cilantro
1/4 cup raisins
3 tbsp vegan mayo
1 tbsp dijon mustard
1 1/2 tsp curry powder
Instructions:
Rinse and drain chickpeas then add to a large bowl and mash with a fork to desired consistency. I like mine to still have some whole chickpea pieces!
Add in your carrots, cilantro, onion, and raisins and mix thoroughly.
Add in your mayo, mustard, and curry powder and continue to mix thoroughly.
Enjoy in a wrap, in a sandwich, on a salad, or with some crackers!
