Curried Coconut Pumpkin Hummus

This might be the best hummus you will ever eat. Lately I've been buying cans of pumpkin and pretty much just adding it to everything because its so versatile and so YUMMY. Sooooo if you end up liking this recipe, check out some of my other pumpkin recipes!

Ingredients:

1 cup chickpeas

3 tbs pumpkin puree

3 tbs coconut milk

1/2 tbs lemon juice

1/2 tbs tahini

2 cloves garlic

1 1/2 tsp curry powder

1/2 tsp paprika

1/4 tsp onion powder

1/4 tsp black pepper

1/4 tsp salt (add more to taste)


Instructions:

Hummus is literally one of the easiest foods to make - throw everything in a blender or food processor and just blend until smooth. If the consistency is too thick, add some more coconut milk or a little water to make it less chunky! Enjoy with some veggies and pita bread or on a piece of toast! I garnished mine with a sprinkle of paprika, sesame seeds, pomegranate seeds, and a couple jalapeño slices - the combo of sweet and spicy was so yummy!
