Curry Butternut Squash Mac n Cheese

My first recipe for butternut squash mac n cheese was received so well (find the recipe here!), that I decided to add one of my favorite ingredients... curry powder! Hope you all enjoy this one as much as the original recipe! Let me know in the comments below, or snap a pic and tag @simply__radishing on insta for a feature!

Ingredients (makes 4 servings):

2 cups cubed and steamed butternut squash

6 tbs nutritional yeast

1/3 cup unflavored/ unsweetened almond milk (any unsweetened/ unflavored dairy free milk will work!!)

1/2 tbs of curry powder

1 tsp onion powder

1 tsp garlic powder

1/4 tsp black pepper

1/2 tsp salt - can add more to taste!

a dash of cayenne if you're feeling extra ~spicy~

dry pasta (duh) - I used red lentil pasta from Trader Joe's for some protein!

Instructions:

  1. Cube and steam your butternut squash. Squash should be tender!

  2. Combine all ingredients (except for the pasta - duh) in a blender or food processor and blend until smooth.

  3. Cook about 4 servings of pasta, drain, and then mix your cheese sauce into the pot.

  4. Enjoy!!

I added some steamed kale, jalepeños, and a sprinkle of cilantro onto mine!
