Recently I have become a huge soup girl, because I can just toss everything in a pot and let it simmer while I clean the kitchen - big multi tasker! Soups are also awesome because they're a great meal prep and they can really easily be frozen and reheated. Since I have an OBSESSION with Mexican food and spices, here's my vegan fajita soup!
Ingredients:
1 can black beans
1 can vegetable broth
1 can diced tomatoes
1 yellow onion
2 cloves garlic
1 cup frozen corn
1 small zucchini
1 small yellow squash
1 small jalapeño
1 tsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp black pepper
1/4 cup chopped cilantro
shake of salt
Instructions:
Dice your onion and garlic and put it in a pot with half the can of vegetable broth. Let this simmer while you chop the rest of your ingredients.
Add in your squash, zucchini, corn, beans, jalapeño, can of tomatoes, and the rest of the vegetable broth and give it a few stirs.
Add in your cilantro and spices and stir a few more times.
Reduce the heat and cover up your pot. Stir every few minutes, allowing it to sit for 15-20 minutes.
Garnish with some cilantro, jalapeño slices, and nutritional yeast, and enjoy!
