Fall Quinoa Bowl

You know I love a good nourish bowl - and now that fall is upon us I HAD to make one with all the fall flavors and goodies!

Ingredients (makes two bowls):

4 handfuls of spinach

1/2 cup dry quinoa

1 small apple

1 cup of edamame (I use frozen)

1/4 cup dried cranberries

1/4 cup walnuts

2 tbs fresh parsley


For the dressing - Miso Tahini (my fav):

2 tbs tahini

1 tsp miso

1 tsp dijon mustard

1/2 tsp garlic powder

1/4 tsp black pepper

1/4 tsp salt

almond milk to thin to desired consistency


Instructions:

  1. Cook quinoa according to instructions on package.

  2. While quinoa cooks, combine your dressing ingredients and whisk together, adding almond milk until you reach the desired consistency.

  3. Optional: toast walnuts in a toaster oven or oven a 350 for 5-6 minutes

  4. Dice apple and prepare edamame if frozen.

  5. Place two handfuls of spinach in each bowl.

  6. Divide quinoa, apple and edamame between bowls.

  7. Dress with dressing and top with walnuts and dried cranberries.

  8. Top with a little fresh parsley and enjoy!
