I've seen a lot of protein cookie/ brownie/ muffin recipes lately, so I decided it was time to hop on the trend and make my own version! These muffins are only 150 calories each with 8 grams of protein. They have a dense fudgey texture, which makes them seem super rich, or are super soft and gooey if you try one right out of the oven like I did :)
Ingredients (makes 3 muffins)
1 ripe banana (mashed)
1 scoop protein powder (I used Carrington Farms coconut protein blend)
1/4 cup almond flour
1 tbsp stevia
1 tbsp cacao powder
1 tsp baking powder
2 tbsp almond milk
1 tbsp unsweet applesauce
1 flax egg (1 tbsp flax seeds + 2 tbsp water - allow to sit for 5 minutes to thicken)
splash of vanilla
pinch of salt
option to add a few chocolate chips to the top of your muffins too!
Instructions:
Pre-heat your oven to 350.
Combine all ingredients and mix thoroughly.
Pour batter into muffin cups and bake for 20-25 minutes - these muffins won't rise a lot, I just kept sticking a fork in them until it came out clean to determine when they were ready.
