Green Curry Noodles

I've had a jar on green curry sitting in my pantry for what feels like forever so I decided it was finally time to put it to use with these noodles! These are pretty spicy but so yummy! They make a great meal prep or a tasty din for fam and friends!

Ingredients (4 servings):

half pack of rice noodles (4 servings)

1 block firm tofu

1 small red onion

1 small bell pepper

1 small zucchini

4 cups of chopped green cabbage

5 cloves garlic

1 can coconut milk

1 cup veg broth

3 tbsp green curry

1 1/2 tsp coriander

1/4 tsp salt

1/2 tsp black pepper

5 bay leaves

1/2 lime

1 tbsp fresh ginger

1/4 cup of corn starch

olive oil


Instructions:

  1. Prepare your tofu. Slice the tofu into rectangles then press for 30 minutes. Move to the freezer for 30 minutes. Remove from freezer and press for 30 more minutes.

  2. Slice tofu rectangles into large triangles and completely cover in corn starch.

  3. In a large skillet, heat enough olive oil to completely cover the bottom of the skillet. Place tofu in on one side. Cook for about 2 minutes on one side then flip. Keep this process going until tofu is browned and crispy. Add more oil as needed

  4. Remove tofu and set aside.

  5. Cut pepper, zucchini, and onion. Mince the garlic cloves

  6. Using the same pan or a clean one, heat a couple tablespoons of oil. Add zucchini, onion, pepper, and garlic and gently sautee.

  7. When the veggies have gotten softer, add 1/2 cup of vegetable broth and continue to simmer at a low heat.

  8. Add coriander, ginger, and green curry paste and mix.

  9. Add in the cabbage, tofu, and bay leaves.

  10. Begin to slowly add coconut milk.

  11. Squeeze lime juice into the skillet.

  12. Prepare your rice noodles according to instructions on package.

  13. If needed, add the rest of the veg broth to the curry sauce - if there is still a lot of liquid in the skillet skip this step!

  14. Drain and rinse rice noodles then combine it all and enjoy!
