High Protein Mediterranean Salad

Introducing your new favorite salad! This mediterranean salad is high protein and loaded with healthy fats and full of flavor!

Ingredients (makes 4-6 servings):

1 jar of vegan feta (store bought or make your own using my recipe here)

1 can chickpeas

2 cucumbers

2 cups cherry tomatoes

2 medium avocados

1/4 cup hemp seeds

3 tbsp green onion


for the dressing:

3 tbsp olive oil

3 tbsp red wine vinegar

1/4 cup lemon juice

1/2 tsp salt

1/2 tsp oregano

1/2 tsp garlic powder

1/2 tsp black pepper


Instructions:

  1. Halve the cherry tomatoes and dice cucumbers and avocados into bite size pieces. Add veggies into a large mixing bowl.

  2. Drain and rinse chickpeas and add to bowl along with vegan feta.

  3. Toss salad ingredients in bowl to combine.

  4. In a separate bowl, add all of your dressing ingredients and mix thoroughly.

  5. Pour dressing over salad and mix thoroughly.

  6. Top with hemp seeds and green onion and enjoy!
