Ever needed a few sunflower seeds for a recipe and ended up with a huge bag of them? These sat in my pantry forever, until I finally decided to try making my own nut (or seed in this case!) butter. Sun flower butter is super yummy and a great alternative for nut butters for people with nut allergies! I've been eating this butter on fresh bread for breakfast and it is delicious! I hope you enjoy too!
Ingredients:
2.5 cups sunflower seeds, raw and shelled
2 tbsp stevia or other sweetener
1 tbsp chia seeds
1/4 tsp salt
Instructions:
Pre-heat oven to 400, and spread your seeds out on a baking sheet.
Bake for 10-12 minutes. The seeds should be fragrant, but not burnt. Check them once or twice to flip/ shift the seeds and ensure they aren't burning
Add seeds, chia seeds, stevia, and salt to a food processor and blend. The consistency will first seem grainy and like a meal. Continue to blend until the mixture becomes thick and forms a sticky ball. This took me about 6-8 minutes.
Store your butter in a jar in the fridge for up to a month!
