Hummus & Roasted Veg Tacos

Been on a big taco kick lately because I think little tortillas are so fun and cute, and its so easy to toss anything on them for a quick meal! This is one of my fav combos recently - kinda Mediterranean Latin fusion? Don't know, but they're so good!

Ingredients (for three tacos):

3 mini corn tortillas

1/2 cup baby carrots (cut into pieces)

1/2 chopped red cabbage (not super tiny pieces)

4-5 stalks of asparagus

3 tbsp (or more!) of your fav hummus **

1/2 tsp garlic powder

1/4 tsp salt

1/2 tsp black pepper

olive oil spray


optional: za'atar and red pepper flakes


** I used a store bought hummus (classic) but linking below some of my homemade hummus recipes you could use!


Instructions:

  1. Pre-heat oven to 400.

  2. Spray a baking sheet with olive oil spray and then toss on your veggies. Sprinkle with garlic powder, salt and pepper. Spray again with olive oil.

  3. Bake for 20 minutes, taking the sheet out of the oven to toss the veggies around on the tray halfway through.

  4. Warm tortillas on a skillet on the stove.

  5. Slather about a tablespoon of hummus onto each tortilla then top with veggies.

  6. I sprinkled on a little za'atar and red pepper flakes since I used a plain hummus, but this is totally optional! and probably not needed if you use a strongly flavored hummus!

  7. Enjoy!

  8. Double, triple or quadruple the recipe depending on how many tacos you want!
