Orange Cranberry Walnut Oat Cake

Watch out overnight oats because oat cakes might be taking over, and this might be my new favorite flavor!

Ingredients:

(makes two servings!)

1/2 cup oat flour

1/4 cup unsweet applesauce

1/4 cup almond milk

splash of vanilla

2 tbs maple syrup

1 tbs orange zest + 2 tbsp fresh orange juice

2 tbs chopped walnuts

1/2 tsp cinnamon

3 tbs dried cranberries



Instructions:

  1. Preheat your oven to 375.

  2. Put all of your ingredients (minus the cranberries and walnuts) into a blender and blend until smooth. Fold in the cranberries and walnuts, and then place in a small baking dish.

  3. Bake for 25 minutes.

  4. I served mine with a cherry compote that was just a combo of mashed cherries, stevia, orange juice, and chia seeds!
