PB Chocolate Banana Protein Muffins

What's your favorite way to get in your protein? One of my personal favorites is probably in muffin form :) These muffins are sweet and healthy and make the perfect breakfast or post-workout treat!

Ingredients (makes about 8 muffins):

2 large ripe bananas

3/4 cup of coconut flour

2 scoops vanilla protein powder (I used Orgain)

1/4 cup creamy peanut butter

1/4 cup agave

1/3 cup almond milk (can sub another plant based milk)

1 tbsp apple cider vinegar

1 tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

1/4 cup chocolate chips (I used Lily's dark chocolate baking chips)


Instructions:

  1. Pre-heat oven to 360.

  2. Mash bananas in a large bowl.

  3. Add your other wet ingredients (milk, peanut butter, ACV, agave and vanilla extract) and mix thoroughly.

  4. Add in your dry ingredients and thoroughly combine.

  5. Mix in chocolate chips evenly throughout the dough.

  6. Your dough should be wet - if the texture is too dry add another tablespoon of milk.

  7. Line a muffin tray with liners or spray.

  8. Distribute dough into the muffin tray - mine made 8 muffins.

  9. Bake for 20 minutes, testing with a fork to ensure muffins are cooked all the way through.
