If you are a peanut butter lover like me, then this recipe is for you! They are peanut-y, chocolate-y, and contain 7 grams of protein each!! Like what more could you ask for in a cookie!?
I discovered PB fit a few months ago and now I am obsessed! I usually use it in oatmeal and smoothies - it has more protein and less calories and fat than normal peanut butter, but still has that delicious peanut butter taste. After I saw a similar peanut butter swirl cookie on Instagram, I decided to test out a similar recipe using PB fit and the result was delishhhh :)
Ingredients (makes 8 cookies):
1 cup oat flour
1/2 tsp baking powder
1/3 cup peanut butter
3 tbs coconut oil (melted)
2 tbs almond milk
6 tbs maple syrup
3 tbs PB Fit original
2 tbs PB Fit Chocolate
2 tbs cacao powder
roasted peanuts
Instructions:
Pre-heat oven to 350.
In a bowl combine oat flour, baking powder, peanut butter, coconut oil, and almond milk.
Divide the mixture into two separate bowls. *
In one bowl, add the PB Fit original flavor and tbs of maple syrup.
In the other bowl, add the PB Fit chocolate flavor, cacao powder, an extra tbs of almond milk and 4 tbs of maple syrup.
Once the ingreidients are thoroughly mixed, roll the dough from each bowl into 8 balls (making 16 total)
Combine a peanut butter ball and chocolate ball, then flatten to place on parchment lined baking sheet.
Sprinkle crushed peanuts onto the cookies and bake for 15 - 20 minutes.
* If you do not have PB Fit chocolate then add 5 tbs of PB Fit original at this step. Then separate the dough into two bowls adding 2 tbs of maple syrup to one (the peanut butter side) and 2 tbs cacao powder, 1 tbs almond milk and 4 tbs of maple syrup to the other (the chocolate side)
