Peanut Tofu Lettuce Wraps

First featured on the Total Revival 2021 plan, these lettuce wraps are pretty, light, and healthy! I served mine with a sweet coconut rice which is so easy to make too! My mom used to make something similar with chicken when I was growing up, and it was one of my favorite meals! I think these are even better though, which just shows how easy it is to veganize so many things! Ingredients:

3 tbsp peanut butter

3 tbsp soy sauce

2 tbsp lime juice

1.5 tsp chili garlic sauce

1/2 tbsp fresh ground ginger

1-2 tsp sesame oil

12 oz tofu

1/2 c chopped white onion

1/3 c water chestnuts

1/2 cup white rice

1 cup coconut milk

Head of lettuce







Instructions:

  1. Boil rice in ½ cup of water, add coconut milk slowly as water begins to absorb. It should take about 20 minutes for all coconut milk to absorb.

  2. Make peanut sauce with peanut butter, soy sauce, lime juice, chili garlic sauce, fresh ground ginger, and sesame oil.

  3. Saute onions in sesame oil on skillet on medium heat, as they begin to brown and soften add tofu and water chestnuts. Pour on sauce and allow to simmer 4-5 minutes.

  4. Serve tofu in leaf of lettuce with jalapeno slices, chopped cilantro and crushed peanuts as garnish.
