Pine Nut Kale Pesto Pasta

A few months ago, my family was calling my plant area the graveyard because my plants unfortunately had a rough winter. Now my basil plant, that I literally grew from some tiny seeds and a plant growing kit that Ty gave me for Christmas is THRIVING. All this fresh basil called for a good pesto recipe, so here ya go!

Ingredients (makes 2-3 servings):

Pesto:

1/3 cup roasted pine nuts

handful of kale

1 cup fresh basil leaves

2 tbs olive oil

1 garlic clove

1 tbsp nooch

salt and pepper to taste

and...

2-3 servings of pasta

1 cup halved cherry tomatoes

optional: red pepper flakes

Instructions:

  1. Cook pasta according to instructions on package.

  2. Combine all pesto ingredients to a food processor for the pesto and blend. If it is too chunky, add 1-2 tablespoons of warm water.

  3. Mix pesto into pasta, top with cherry tomatoes and red pepper flakes, and enjoy!
