Pizza Pinwheels

Cinnamon rolls... but make them pizza. This recipe is awesome and super easy to make! My boyfriend (a pizza-roll connoisseur) said that this dish didn't even taste vegan - shows how easy it is to sub out animal products!


Ingredients:

vegan pizza dough (pretty easy to find, most pizza dough is just wheat - we got ours at Kroger)

vegan mozzarella (I always use Daiya)

pizza sauce/ marinara sauce

1/3 cup diced onion

1 clove of garlic

4 handfuls of spinach

olive oil

fresh basil

red pepper flakes, salt, and pepper



Instructions:

  1. Preheat your oven to 400.

  2. Roll out your pizza dough into a big flat rectangle. If the package recommends it, pre bake for 3-4 minutes. This will ensure that the inside isn't super doughy, and will make it easier to roll up and cut the dough in order to bake it.

  3. Put a little oil in a skillet on medium heat, and saute your onion, spinach and garlic with a sprinkle of salt and pepper - if you don't want any veggies, feel free to skip this step. OR you could add some other veggies like mushrooms, or even beyond sausage.

  4. When the pizza dough has finished its pre-baking, lay it out and spread on your marinara sauce, completely coating the top of the pizza - if you are a big marinara person then use more!

  5. Next spread on your cheese - we used a lot to make it extra cheesy. At least cover the whole thing in a thin layer of cheese.

  6. Spread your sauteed veggies onto the pizza and sprinkle with a little salt, pepper, and red pepper flakes if you want to add a little kick.

  7. Take the long end of the dough and roll it up until you have a long log of pizza. Slice pinwheels about 2 inches long, and place in a sprayed 6x6 or 8x8 baking dish.

  8. When you have all your pinwheels lined up, either spray the top with olive oil or brush a little on - this will make the top crispy. Sprinkle on some finely chopped basil.

  9. Bake for 25 minutes, or until the top is golden brown.
