A few months ago I tried making brownies out of black beans and they turned out so well, I decided I HAD to try to make something similar again. So here we are some protein-packed chocolate chip pumpkin blondies with my pumpkin spice cream cheese frosting that got so much love from my pumpkin muffin recipe!
Ingredients:
For the blondies:
1 can rinsed and drained chickpeas
1/2 cup creamy peanut butter (can sub almond or cashew butter!)
1/2 cup maple syrup
1/2 cup pumpkin
1/4 cup of oat flour
2 tsp vanilla
1 tsp pumpkin pie spice
1/4 tsp baking soda
1/4 tsp baking powder
1/2 cup dairy free chocolate chips
And for my famous pumpkin spice cream cheese frosting:
dairy free cream cheese - I think Kite Hill works the best because it is a little thicker than some other brands!
maple syrup
pumpkin spice
Instructions:
Preheat the oven to 350
Spray an 8x8 pan with olive oil or oil of your choice
Blend all of the ingrendients for the blondies (aside from the chocolate chips) in a high powered blender or food processor until smooth
Stir in the chocolate chips then transfer into the baking pan
Bake for 25 - 30 minutes - until a toothpick or fork can come out of the blondies clean
While the blondies are baking, combine the ingredients to make the frosting.
Allow the blondies cool, smother in frosting, and then enjoy!
