My new job has had me up and out the door every morning a lot earlier than I'm used to so meal prep has been huuuuge for me! Overnight oats are my favorite breakfast to prep because it takes about five minutes to make them and they taste so good! Obviously I had to do a fall pumpkin version because like I've said a million times - I am completely pumpkin obsessed!
Alsoooo, you definitely could make a hot version of these oats, BUT I think they work better as overnight oats because the oats have so much time to soak up the spices making them extra flavorful!!
Ingredients:
1/3 cup rolled oats
1 scoop carrington farms coconut protein blend (or other protein powder of choice)
1 cup unsweet almond milk (or other non dairy milk)
1/4 tsp pumpkin spice
2 tbs pumpkin puree
splash of vanilla
1/2 - 1 tbs sweetener of choice (depends how sweet you like things! I used 1 tbs of stevia because I have a terrible sweet tooth haha)
Instructions:
Combine all of the ingredients into a jar and stir/ shake/ mix well - however you wanna do it. Leave oats in the fridge overnight so they can soak up allll the liquid. In the morning throw on some toppings if you'd like (I added some banana, cacao nibs, and walnuts) and enjoy :)
