Sesame Ginger Tofu Noodle Bowl

Ingredients:

2 cups chopped lettuce

1 serving rice noodles

1 block of Nasoya Sesame Ginger TofuBaked

1/4 cup bamboo shoots

1 tbsp pickled ginger

1/2 tsp toasted sesame seeds

1 tbsp cashew pieces

1 tbsp sesame oil



Dressing:

2 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp lime juice

1 tsp chili garlic sauce

1/2 tsp grated ginger

1/2 tsp minced garlic


Instructions:

  1. Cook rice noodles according to instructions on package.

  2. Allow noodles to cool after cooking.

  3. Heat tablespoon of of sesame oil on a non-stick skillet at a medium heat. Cut the tofu block into pieces and lightly fry until they are golden brown.

  4. Place noodles on chopped lettuce and top with the tofu, bamboo shoots, ginger, cashews and sesame seeds.

  5. Whisk all of the ingredients for your dressing together and pour on top.

  6. Enjoy!
