Spicy Black Bean and Quinoa Bowl

My first build a bowl post is going to one of my favvvv bowls lately. I love those mexican spices and anything spicy is my thing! This bowl is cheap and easy to make and so flavorful!

Ingredients (makes 2):

4 handfuls of spring mix

1/2 cup of quinoa

1/2 cup corn

1 cup black beans

1/2 medium cucumber

1/4 cup pickled onions

1/4 cup chopped fresh cilantro

1/2 + 1/4 tsp garlic powder, chili powder, smoked paprika, cumin, onion powder, black pepper, salt

hot sauce of choice


dressing:

1 tbs tahini

2 tbsp nutritional yeast

1/3 cup plain soy milk

1/2 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper


Instructions:

  1. Cook quinoa according to instructions, mixing in 1/2 tsp of all the spices as the water begins to absorb.

  2. While the quinoa is cooking, combine all the ingredients for the dressing and whisk together. Add more milk or water if you want a thinner dressing.

  3. Mix black beans with 1/4 tsp of each of the spices listed above.

  4. Divide your greens into two bowls (either share with a friend or pack one up for later!) and place half the quinoa on each bowl.

  5. Divide black beans, corn, cucumber and pickled onion between the two bowls.

  6. Drizzle each with dressing and a sprinkle of fresh cilantro.

  7. Finish it with a couple shakes of your favorite hot sauce and enjoy!
