One of my favorite foods before I went vegan was pad thai - which I can't eat now usually because of the egg :( however, this inspires me to make my own variations of this dish all the time!

Ingredients (makes one serving - follow ratios to double/ triple/ quadruple!):
1 serving rice noodles
2 cups chopped green cabbage
1 bunch green onions
1/2 cup shelled edamame
1/3 cup bean sprouts
Sauce:
1 heaping tbsp peanut butter
2 tbsp soy sauce
1/2 tsp sesame oil
1 tsp garlic chili sauce
1 tbsp rice vinegar
juice from 1/2 lime
1 tsp grated ginger
optional: 1 tsp of siracha for extra spice
Instructions:
Cook rice noodles according to package.
Steam cabbage and edamame until cabbage is soft and edamame is cooked through.
While this cooks, combine ingredients for your sauce and whisk until smooth.
Rinse and drain your rice noodles and return to pot.
Mix noodles, sauce, and veggies together with pot on a low heat.
Dump in a bowl and enjoy!
