As you know, I love love love nourish bowls. This one is light and fruity making it perfect for summer! These bowls are also great for meal prep - just double or triple the recipe as desired :)

Ingredients:
2 handfuls of spring mix
1/4 cup quinoa
1/2 cup blueberries
1/4 cup pickled onions
1/3 cup diced cucumber
1 tbsp pepitas
Dressing (Lemon Miso Tahini):
1/2 tbs tahini
1 tbs lemon juice
1/2 tsp miso
1/4 tsp garlic powder
salt and pepper to taste
optional: soy milk or almond milk
Instructions:
Cook quinoa according to directions on package. When quinoa is finished cooking, sprinkle with salt and pepper and fluff.
While quinoa is cooking, combine all ingredients for your dressing and whisk together. To thin the dressing, you can use almond milk, soy milk, or water (I usually opt for a plant based milk because I like a creamy dressing). Thin to desired consistency by adding more liquid.
In a bowl, place your mixed greens and top with quinoa. Add your cucumbers, blueberries, and pickled onions, then drizzle with dressing and top with pepitas.
