The Healthy Gut Salad

This salad is super yummy and packed with things that are awesome for your digestion and gut health! The base is arugula, which as a bitter food prepares the body for healthy digestion. As a fermented food, sauerkraut is full of probiotics which aid in digestion as well. Apple cider vinegar is also a great digestive aid that helps to ease bloating and inflammation. Olive oil is a healthy fat that keeps the inside of our gut and digestive system healthy. Hemp seeds add more healthy fiber to this salad too!

Ingredients:

2 handfuls of arugula

1/4 cup sauerkraut

1/3 cup chickpeas

1/2 tbsp olive oil

1/2 tbsp apple cider vinegar

1 tbsp hemp seeds

salt and pepper to taste


Instructions:

  1. Place arugula in bowl and top with saukraut and chickpeas.

  2. Drizzle on olive oil and vinegar.

  3. Sprinkle on hemp seeds and salt and pepper and enjoy!
