The Perfect Pumpkin Muffins

Every fall I make some version of pumpkin muffins, and this year I finally perfected my recipe!! These muffins are moist, sweet, oil free, topped with a yummy pumpkin spice cream cheese frosting…. and they are only 100 calories each!! Enjoy these with a cup of hot apple cider for the full fall effect :)

Ingredients

1 3/4 cup flour

1/2 cup white sugar

1/2 cup light brown sugar

1 tbsp baking powder

1/2 tsp salt

2 tsp cinnamon

3/4 tsp ground ginger

1 cup pureed pumpkin

2 tsp vanilla

1/2 cup plant based mylk

1/2 cup unsweet applesauce

frosting:

6 tbs vegan cream cheese (I used kite hill plain cream cheese)

1 1/2 tbs maple syrup

1 tsp pumpkin spice

Instructions:

1. combine your dry ingredients and mix thoroughly before adding pumpkin, mylk, applesauce and vanilla

2. mix well and separate into 14 cupcake liners and bake at 375 for 15 minutes

3. combine the ingredients for the frosting and mix well while the muffins bake

4. after the muffin have cooled, top with the frosting and enjoy!
