Been on a huge healthy cookie kick lately and these are probably my favorite recently! They're a little spicy and not too sweet, and the perfect amount of chewy! Each cookie is only about 100 calories too, so they make the perfect light treat!

Ingredients (makes 8 cookies):
3/4 cup of almond flour
1/3 cup of almond butter
1/4 cup of maple syrup
1 flax egg (1 tbsp ground flax seeds + 2 tbsp water; allow to sit for about 5 minutes until thick)
1/2 tsp baking powder
1 tsp chai spice blend **
1 tsp vanilla extract
*My Perfect Chai Spice Blend:
2 teaspoons ground cardamom
2 teaspoons ground allspice
2 teaspoons ground nutmeg
4 teaspoons ground cinnamon
2 teaspoon ground cloves
6 teaspoons ground ginger
store in an airtight container and enjoy!
Instructions:
Pre-heat oven to 350.
Combine dry ingredients in a bowl and mix thoroughly - flour, baking powder, and spice.
Add wet ingredients and mix thoroughly. This will form a thick ball of dough.
Roll the dough into 8 balls and press flat into cookies.
Place cookies on a parchment lined baking sheet and bake for 18 - 20 minutes. Cookies will appear cracked on top.
Let cool and enjoy!
