Vegan Feta

Jumping on the vegan feta pin with my own spice combo! This is easily going to be one of my new fridge staples because it is soooo good and high in protein! Makes a great topping for avo toast, salads, tacos or in sandwiches!

Ingredients:

1 block firm tofu

2 tbsp warm water

2 tbsp apple cider vinegar

2 tbsp lemon juice

2 tbsp olive oil

1 tsp garlic powder

1 tsp oregano

1/2 tsp salt

1 tsp miso

1/2 tsp ground black pepper

2 tsp nutritional yeast


Instructions:

  1. Press tofu for 10 - 15 minutes. I usually slice mine about 1/2 inch thick, layer it between 2-3 paper towels on each side, and set a heavy book on top.

  2. While your tofu is pressing, combine the wet ingredients for the marinade in a jar or tupperware (water, vinegar, lemon juice and olive oil) and mix thoroughly.

  3. Add in the miso, nutritional yeast, and spices and mix thoroughly again.

  4. Crumble or cube your tofu into the marinade and make sure it is coated thoroughly.

  5. Store in the fridge for at least two hours but preferably overnight for best results.

  6. Enjoy with a salad, pasta, on hummus, or however you would like!
